Veggies’n Guacamole

What you need for four people:
2 ripe avocados halved and pitted
2 tablespoons of freshly squeezed lime juice 1/2 cup of finely chopped red onion
2 seeded and finely chopped plum tomatoes 2 tablespoons of chopped cilantro
1 pinch of salt to taste, pepper to taste
a couple of tablespoons of
shredded mozzarella or cheddar cheese.

What to do:
With a fork mash the avocados into small chunks. Add the remaining ingredients,
mix and sprinkle with the shredded cheese.
Cut into sticks carrots, celery, zucchini, and peppers. Small endive salad leaves are also great for dipping
into the soft and tasty guacamole.
Your whole family will love this simply delicious treat.
