Broccoli & Beans Soup


What you need for 3-4 Cups:

*2 broccoli heads, chopped
*1 cup cannellini beans, drained
*2 minced garlic cloves
*1 shallot, minced
*1 tbsp olive oil
*2 1/2 – 3 cups of vegetable stock
*1/2 tsp freshly ground pepper
*2 tbsp of grated pecorino cheese

What to do:

Add shallot and garlic to oil that has been warmed over medium heat. When garlic has tanned, add the broccoli and cook for about 1 minute. Pour the vegetable stock with the pepper. Let cook until broccoli is tender. When it has cooled down, pour everything into a blender and blend to the desired texture. Sprinkle with pecorino cheese. Serve warm or cold. Enjoy!
