Healthy-Yummy Muffins


What you need

(12 muffins)

 

2 cups whole wheat flour

1 cup strawberries, hulled and cut into small pieces

1 sliced banana

½ cup pine nuts

½ cup dark chocolate chips

1 large or 2 small eggs

1 cup low-fat vanilla yogurt

2 tbsp liquid honey

1.5 tsp baking powder

½ tsp baking soda

 

What to do

 

Preheat the oven to 400 degrees

Place flour, banana, egg(s), yogurt, honey, baking powder and baking soda into a blender

Blend until very smooth.

Add strawberries, pine nuts, and chocolate chips, leaving a pinch of each ingredient.

Mix well

Place baking cases into a 12 muffin tray & distribute the mix

Add the remaining strawberries, pine nuts & chocolate chips to the top of the muffins.

Bake for 15-20 minutes (or until a toothpick can be inserted and removed cleanly).

Let the muffins cool.
